My PS3 recently broke (YLoD), and instead of replacing the PS3, I was considering getting an Xbox 360 instead. I'm not really a heavy gamer, so I don't have a ton of PS3 games, but I do like to play Call of Duty and NBA 2K. So I was wondering if gamestop or some other place like that would let me trade in my PS3 games for Xbox ones?

You can trade it but it won't be a straight up trade. More often than not, you'll have to pay extra, even if you're trading for the same game but different consoles.
You generally can do that, but it would be a loss to you. Now not on account that PS3 is better than 360, although that will be a rationale, there may be a different reason. A PS3 recreation is on a Blu-ray disc at the same time a 360 sport is on a DVD. And as you know Blu-rays are worth more than DVD's, so that might be variety of a loss
