I have a math class, and the professor gave homework. I didn't do it, and I have class tomorrow. I say to myself, this isn't high school and she isnt going to be going around checking it. I feel pretty good with the material so I feel I don't need to do it.

If you have homework, and it says it has a due date, then the homework will be collected (and contributes to your grade). I have never heard of a prof doing what they do in high school though (go around the room and collect the assignments, and if you have not done yours, make a snide comment or something, etc.), we have always just handed in our homework at the end of class (or beginning, professor's choice) on the front desk and the prof gives it to the grader/TA. Professors do not grade homework usually, but may glance at graded assignments if they feel like it, before handing it back to you. You are right, it is not high school. If you do not do your work, the professor is not going to make you do it, they will let you fail. It is your money, you can fail with it if you want to. You might not need to do homework in this course to do well (should it be sufficiently elementary/remedial), but as a friendly encouragement: I recommend you do the homework. College might not be hard now, but even in the same semester classes can rear their ugly heads. The beginning always starts off easy freshmen year for every class. Later on, it may take a turn for the more rigorous.
From my experience, the size of your class will answer that question. I've had some upper-level math courses with only 8-12 students in it, and that homework was graded. However, there were typically 60-80 students in my freshman-level courses... those were never graded.
If you go to a teaching college (a university that's not heavy in research) the faculty's primary job is to teach, and they'll have more time to grade homework. However, if you go to a research university (typically, a school that has a Ph.D. program), your professors are instructed to spend 70% of their time doing research, 20% teaching, and 10% doing service. These people have grants to write and experiments to run - no time to babysit you and make sure your homework is correct. Unless they have a TA.
It will be different for every professor in every class, but my best estimation is:
- Teaching college / institution that doesn't have a Ph.D. program - they'll collect
- Research university but small class sizes and there's a TA - they'll collect
- Teaching college, no TA, small class - they'll collect
- Any institution, class size more than 60... probably won't collect.
Homework is checked and how it is checked depends on the class and the professor. For classes that require an essay or paper most professors use a plagiarism website or tool and for those that require actual calculations they are checked manually or by using a score sheet usually only available to the teachers.

By and large no. Although I did one class (Multivariable Calculus A) where he did and I was the only one that did it. I must also say that probably ticked him off a bit because he set a stinker of a final. I came down with the flu during that final and did horrid - I actually thought I could fail. I put in in a request for consideration due sickness but that turned out to not be necessary - they gave me an honor anyway. I spoke to a professor about it later and he laughed - they know who does the work and who doesn't. Bottom line here is nothing much will happen if you don't do it but it won't endear yourself to the professor.

It all depends on the professor. Usually they do not. Professors tend to take grades from exams and papers. In the mind of a professor you don't need to be babysat and if you really wanted to succeed in the class you would do the homework, but if you feel comfortable with it I wouldn't go out of my way to do it.
Oh sure. Sometimes. It depends on the course and the instructor. I won't always go through and grade each individual assignment, but I'll at least glance through and see if you put in the work. If a student fails to submit the homework, they get no credit for attendance that day.
Do your homework! You developed your identity in high school now it is time to develop your ethic. She gave you that assignment for a reason. You are practicing for the kind of employee you are going to be. If you are given a task and you don't do it because the cat's away, you are not going to be liked by your peers and you won't be employed long. Do the work. If its too late, don't do this again.
You would most likely have to turn it in. You get assignment/participation grade.
