I'm going into high school next year, and I would like to go to UC Davis for college. I heard that the UC system favors AP over IB. I have the choice of going to a public high school with a VERY well respected IB program, or go to a private Christian high school that offers AP. Is it true that the UC system prefers AP? I'd much rather go to the IB school because it has a much more intense program.

You won't have any trouble getting into UC Davis regardless... it's not exactly a high competition UC. In any event, UC Davis seems to treat them basically the same for purposes of credit: "Transfer credit is granted for each College Board Advanced Placement (AP) Examination completed with a score of 3, 4 or 5. Students completing the International Baccalaureate (IB) diploma with a score of 30 or above will receive 30 quarter (20 semester) units total toward their UC undergraduate degree. The university grants 8 quarter (5.3 semester) units for students who receive IB certificates with scores of 5, 6 or 7 on Higher Level exams."
Sorry, this is way over my small brain. In the end it is you who has to make the choices, so just find out all you can about all the options open to you and then if all else phails, flip a coin.
