I'm approaching my last year of high school and I'm really uncertain about what classes I should take... I know orchestra all four years shows commitment and looks good, and I really wouldn't mind staying in it. But I'm not extremely dedicated to it either. There's more AP classes I can take.
How bad would it be if colleges saw that I dropped out of Orchestra the last year of high school?

That depends on the college you plan on attending. Some put more importance on grades, SAT/ACT scores, and AP scores instead of extracurricular activities. Others take a balanced look at a student, in that they also check a prospecting student's activities, letter of recommendations, volunteer hours, and other assorted factors.
If you're really not that dedicated to orchestra, then you should opt for AP classes. Besides, if you score well on the exams, you'll receive credit for university courses (meaning you won't have to take some required classes).
What do you want to do? Senior year isn't as important to colleges as freshman/sophomore/junior since apps are due during the fall. Colleges will see what classes you're taking and will get a midyear report to make sure you're still doing okay, but that's about it. This would be the year to take what you want and making sure you have fulfilled all graduation requirements.
Dropping orchestra for another AP class really won't affect your application all that much. If you're thinking of taking another AP just because it looks good, I wouldn't bother. However, if it's a class that you think is interesting, then go for it. Pick for yourself; not for colleges.
I can honestly tell you that you should do orchestra. I took AP classes in high school and NONE transferred to university. NONE. It's a sad truth, but its the truth. Also, everyone that I've spoken to who took AP classes have had ZERO transfer with them to college. If you want to take AP classes, you will be making more work for yourself for no reason other than trying to 'impress' the school you want to, and they look at your GPA more than anything else.
