I'm a PC user, but I'm going to switch to Mac. I have games on my PC (Skyrim, ZT2) and programs (Sony Vegas Pro 10) that I want to use on my future Mac. How would I go about transferring these files over? Especially for Sony Vegas, Skyrim is on Steam, so at least my saved games will be ok and I really don't care too much about ZT2.
How can I transfer these programs to a Mac without having to re-buy them all?

They won't run on a Mac - Macs have completely different operating systems, and you can't run windows-based programs/games on them.
The only way to use them would be to get a 'Virtual Machine' or install 'Bootcamp' - this is when a version of windows runs inside your Mac so you can run these programs. Either that or buy Mac versions or equivalents (Sony Vegas is not available for macs - try final cut pro)

the easiest way is to format a flash drive to 32fat, transfer the files on the flash drive, then transfer to the mac. the only other way is if both ere networked together.
