Hi everybody, I've been trying to get a recipe for Sohan-e Qom for quite a while. Now, there is a clip from an Iranian cooking show on youtube that comes with a recipe. However, even though I made a really nice saffron brittle, I kind of missed the pastry-like texture which causes it to crack on the edges and surface while it hardens. I've since tried adding more flour, both reducing and increasing cooking time of the caramel base, but it still turns out to be more of a soft chewy brittle than a solid cake. Any ideas, pleeeeease?

150 grams fine sugar
3-4 spoonfuls thick honey
100 grams cooking oil
1 tsp. saffron
150 grams almonds
100 grams pistachios
Wash and thinly slice almonds, then allow to dry. Thinly slice pistachios.
Mix sugar, honey and oil and cook over high heat stirring occasionally until sugar melts and turns golden.
Add almonds and continue cooking while stirring occasionally until almonds also turn golden. Avoid too much stirring of the mix.
Dissolve saffron in a bit of hot water and add to the mix.
Pour some oil on a flat tray and rub over the entire surface. Pour a small amount of the mix on the tray. If it solidifies quickly, the mix is ready. Turn the heat very low.
Pour small portions of the mix using a teaspoon on the tray at equal distances so that the portions do not touch. As soon as each portion is poured on the tray, place a few slices of pistachio on top. Allow to cool.
Separate the sohaan from the tray using a knife and keep in a covered container.
Sohan Ghom Recipe
Here is a dessert that is not only crazy easy bud very yummy to. You will need solid/not quite ripe peaches. Long cinnamon sticks GM ( grand Mariner) sugar, vanilla extract and a basting brush First you want to get your peaches clean and cut in half and pull the pits out. Then you will want to securer them with the cinnamon sticks. You may only be able to fit on half of the peach on the cinnamon stick and that is OK. Set those aside. Then you want to (over low heat) take i cup of granulated sugar 2 plus tablespoons of vanilla and 2 table spoons on butter combine all. For this you can use a sauce pan and put straight onto your grill til it melts down. Once that happens put your peaches onto the grill and with your brush spread the mixture onto the peaches. Keep on each side for 30 to 60 seconds and marinate all sides. Then you are done. You can have them by themselves or have them with ice cream or what ever you want!
