"That's true" is the opposite of "That's false" and that's what you hear mostly. Otherwise, you could say "That's the truth!" if you want to emphasize the fact.

That they are all applicable to create a life that could be free from misery. How ever we have to figure out precisely enough whatever will make it as a "right" or "wrong" way of implementation. This could be already difficult for a normal being. Beside that fact of those matters occurring uncontrollable difficulties in time from the flawed nature itself, that we are not always free from miseries even IF we may follow these noble truths properly enough, and so as the 8 fold path. Since in most cases that some other people, situations and places (environmental) could also influence our own energy and way of living. We use "that's the truth" and not "that's truth"
So "that's true" is the correct one to use.
