I have always appreciated the mentality of a minimalist, having only what means the most to you and only what you need. Now, I am no minimalist, because I have so much stuff I don't need but really enjoy. However, this makes me unorganized, so I have begun cleaning out my bedroom and getting rid of the things I don't need anymore. I have 2 dressers, both of which are now completely empty (all except for 2 drawers which contain socks, underwear, ties and pajamas and can be put into 1 drawer easily). Everything else has been either sent to a store, to a donation bin, or to my closet. I have permission from my parents to get rid of one dresser, but not both, even though I can easily put the little bit I have in one dresser into a smaller container, and put that in the closet, or get a small nightstand and put them in there. Either way, I see no use out of holding onto a dresser that would be serving no purpose other than to be taking up space.
All of these things being said, I am trying to convince my parents to see my perspective. I respect their wishes, but I also don't see the need to hold onto something I am not using. How can I better explain this to them, or are they right that I still need a dresser?

I have an idea that will please both you and your parents. Why not put one dresser inside your closet and use it for your shoes? This way it will be useful and out of sight.
I have dressers in two of my closets and I love to have the storage space but not the furniture IN the room. Try that, perhaps.
Remember, that dresser is more than likely owned by your parents and maybe they do not want to get rid of it.
How about the idea of putting that dresser in the family coat closet for extra storage. Or, go around the house and look for a useful place for it. Perhaps that would help your parents keep the dresser, but get it out of your room. Or...do you have a sibling who can fit the dresser in their closet, perhaps??

some things cant be hung so you would need a dresser for things like sweaters, So best to hild onto one now rather than have to buy another one later. It also makes finding things easier than a bin in a closet.
You obviously don't need two, but you could keep the smaller one (if there is any difference). Can you fit it in the closet? If it is flat pack you could dismantle it and store under the bed or wherever to resurrect later.
You are bound to start accumulating things again so not having adequate storage space will be a disaster and you do tend to end up with paperwork and other stuff that you can't discard. It is easier to be minimalist if you have space to store the things you need.
I have clients who hanker after the look of houses designed by the high priest of minimalism, John Pawson. But when they realise they have to live like a monk tend to go off the idea. Mr P often does minimalism but with one or two antique pieces, so you don't have to get shot of everything to get the look.
One could be made into a TV stand, if it has a removable mirror.
Not needed, but useful.
