Dip in Parmesan cheese, coat well, shake off any excess
Dip in eggs both sides, shake off excess
Dip in bread crumbs, both sides
Heat oil and butter in pan over Medium to Medium HI heat. Put pork chops in skillet; cook 6-7 minutes on each side until crisp. Don’t keep flipping them. Cook one side then the other.
Whaaaa? Low and slow is a friggin' recipe for cooking "leather" with pork. Instead, sear them at a high heat, add your fav seasoning, turn the pan down to med and let cook until just a hint of pink remains in the middle.

you are over cooking them.
Get a thermometer and temp the meat. 145 degrees is considered done for pork.
165 degrees is considered done for chicken.
Most people freak out over germs, bacteria, salmonella, whatever, and cook the living daylights out of foods when there is no need.
No guess work with a $5 thermometer.
