I am growing paper white narcissus and I love them but does anyone know how to keep them from flopping over. I also have amaryllis that flop over, I do tie with them with raffia .
You'll have stronger plants if you place your newly planted Paperwhite Narcissus somewhere cool and dark for a week immediately after planting. This will give them a little extra rooting time before growing.
Don't grow your plants in an area that is too warm, because the bulbs tend to be taller and weaker which can cause them to lean over. Although not practicle for most people, temperatures of 60-65 degrees are ideal.
Planting several bulbs in a glass vase or jar that is both tall and wide is another way to contain tall Narcissus stems. The sides of the vase will support the stems. Or you can use twiggy branches, decorative fencing or a wired sculptural element for support.
I have written two pieces on growing Paperwhites that you might find helpful. These pages will tell you just about everything you need to know about growing paperwhite bulbs including how to feed them alcohol to keep them from flopping over. This is called the pickling method.

Plant the bulbs as close together as you can without touching, so that the stems & leaves will lean against each other when they start growing.

There are special vases for growing Paperwhites & Amaryllis. The most supportive are the taller ones called "hurricane vases":
