I'm the policy holder and I am a co-owner of my car, my dad is the owner, too. He also have 2 more cars and my sisters are listed as drivers. I am listed as PIP name insured, but they are not (they are just listed as drivers). So, does PIP coverage apply to all of us? In other words, are we all covered?

As long as the insurance company has been properly notified of all household members who hold a drivers license, you are all covered for any and all coverages that have been bought for that vehicle.
PIP coverage is personal injury protection. It covers all named insured on the policy and family members (kids) for medical issues obtained for any car related issues. If your cousin slams their finger in the door, its covered. If your neighbor tries to get in your vehicle, and slips on the ice, their PIP coverage would prevail. Check with your agent to make sure your coverage is properly in place.
