yes, what do you think they do in feilds all day? In the winter when it is too cold to be in the field we shed our cows and they get fed hay (dried grass), silage (fermented grass) and cow nuts and barley, they also get buckets of molasses and salt licks that have other vitamins and minerals in them. Then when the weather gets warmer they get put out in the fields and do whatever they want. Very happy
There are two ttypes of farm cows---one is ordinary farm cows that are put in a field to eat grass and other plants they are the ones that gets fattened for butchers shops and there's the dairy farm cows that are treated much differently and they are fed hay--corn--silage and other foods for them to produce milk only.

Yes, they eat some types of grasses..I doubt they eat turf, perhaps just some grasses that resemble it. Some may eat turf though.
