I made them for the first time today (delicious) fried. I read you can also coat the pastry in egg white and bake them in the oven. Has anyone tried that way?
You really need a deep fryer at the right temperature to get the best results. If you don't get the oil temperature hot enough they absorb a lot of it.

I think it really depends of what you will fill them with.
If they are going to have an apple filling or something, they should definitely go in the oven.
If they are going to be filled with meat and potatoes, they should be fried.
You can really put anything in there: shrimp, tuna, beans, cheese, pear, peaches... ect.
To answer your question, I prefer them baked.
No matter what type of empanada if it be apple, pineapple, or meat I prefer mine baked!
