If you bring it to an Advance or Autozone they will be able to check the CEL with an OBDII reader and give you some insight as to what is causing the car to stall. Could be as simple as a sensor which can be had out of a junkyard for a relatively cheap price.
The Chrysler/Mitsubishi cars really are not difficult to work on, but are certainly not for someone who just expects the car to get up and go every day without routine maintenance like your lower-power Toyotas and Hondas that are more adept to handle that kind of abuse.
Given that you are asking for your niece, I'm fairly confident she is not taking care of the car like it needs to be and will continue to have problems down the road.
Your best bet is to get the code off the CEL, fix that problem, and help her to find a non-car-person vehicle to drive that she doesn't have to pay as much attention to taking care of.
Best of luck.
It's probably a bad idle air control motor. They won't throw a code if they are still working a little bit. You could try cleaning the throttle body, that may help.
Put on craigslist for few bucks then when sold, go bye something else like Ford!
