Lime juice will make the tenderest pork chops. Here is my favorite way:
Place the pork chops in a 13x9 inch pan and sprinkle them with store bought meat tenderizer or salt. pour over them the juice of two limes and two or three tablespoons of salad oil. Sprinkle with a seasoning mix such as Mrs. Dash's and bake at 350 for 40-50 min or until centers reach 170 degrees
Put some seasoning salt and pepper on both sides of the chops, heat a little oil (like 1 tbsp) in a pan to med-high heat and quickly brown both sides of the porkchops (about 1 min. each side)
Once they are browned put them in a shallow casserole dish (that has a lid), add about 1 cup of cream of mushroom soup(or something similar if you don't like that) and bake at 300 degrees for 2 hours or so. Cooking them at a low heat will make them very tender and they will be even better if you have some browning sauce to make the soup/gravy darker and more flavorful. This type of porkchop goes great with mashed potatoes or rice, because you can use the remaining gravy in the pan to pour over them.
to get the best chops, flour them and season then put in a saute pan, , when you turn the chops over let brown for 2=4 minutes, not too long just enough to sear the side, then add a little water or broth and cover and steam for a few minutes until done.
