Iʻm planning a two week trip to Paris and have estimated it to cost around 5000 US dollars
I live in Hawaii so iʻm guessing air travel will be around 2000
I want to stay in a small sort of bed and breakfast place for under 100 a night so Iʻm estimating it would cost around 1260$
I eat lite breakfasts and lunches so around $420 for that
I would like to eat out for dinners so about another $420 for that
this so far adds up to 4100
Iʻd add in 900 more to cover taxis and spending money
do my estimates sound about right for Paris?

To go to Versailles, buy a return ticket valid zones 1 to 4, it cost 10 euros and you can buy it at tube stations. You have to take régional train RER C direction Versailles Rive Gauche, it takes 35' from The Eiffel tower.
When you take a cab, The minimum fare is 6,20 euros, usual rides inside Paris cost between 10 euros and 18 euros, depending on The traffic and distance.
Eating at a restaurant cost from 12 euros per person for lunch, from 20 euros for dinner. in Paris you can ask for tap water "une carafe d'eau" at any restaurant as we all do here. Between 12 euros and 30 euros is ok.
You can buy sandwiches or salads at a bakery or at a supermarket, they cost from 3 euros. At Monop supermarkets you can buy what you'd like to eat and the staff will heat it in a microwave oven, there are tables & chairs.
Not bad, you did a lot of calculations and I can only add a few.
You can eat cheap $5-10 breakfast by buying pancakes, sandwiches, kebabs everywhere in Paris, and for lunch try some nice salads that can serve as a full meal. Remember that lunch always cost less than dinner so you might want to have a big 3 course meal during lunch hour and something light in the evening - this will greatly reduce your spendings on meals.
No need for Taxi - use metro and buses - buy carnet - 10 tickets - they are cheaper, and walk a lot - the best way to experience Paris.
Accommodation - if you plan in advice and book them online, you will find hotels under $100 - try 15th arrondissement (bordering 7th arr) - good small hotels (I live here).
Forgot to ask - when are you traveling to Paris - off season is cheaper.
