If I breed my Himalayan kitty with a grey shorthaired cat, will that make a Siamese? I just want to know because they are super cute cats, and I wish I could make one with the two cats I already have. You know, so I don't get a lemon.

You get a Siamese from breeding a Siamese to a Siamese. Nothing else will produce this breed. That way you get the real thing not a lemon!
If you breed a Himalayan to a grey short hair you will get a mutt. A cat of no breed.

No. Two siamese make a siamese. The HiImalayan was made by breeding persians to siamese and picking only the ones that showed the right coloring. You can't back breed to get a siamese again, especially mixing with a regular shorthair cat. All you get are mixed breed kittens of normal color.
No that mating will not make a Siamese! You need to mate together two Siamese cats to get Siamese kittens. The only permitted matings for Himalayans are to other Himalayans so please do not mate it to something else and produce crossbred kittens that will need homes to be found for them. Do you have breeding rights on your Himalayan? If your cat's breeder didn't give you premission to breed from it then you must not. It would be extremely irresponsible to bring kittens into this world that were not part of a co-ordinated breeding programme to improve a breed.
I would answer similar to JC except to say Burmese actually have gold eyes. . He's a seal point who has darkened with time. Without papers it is impossible to say for sure but he may be a Siamese mix. Or could even be a Siamese of the older style. In which case he will have a single coat (no undercoat) and probably a very distinctive voice
You breed a Siamese by crossing a Siamese with a Siamese.
This is an ancient breed of oriental cat- you can't produce a Siamese, or anything like a Siamese, by cross breeding cats.
The siamese are a distinct breed. The Himalayan was bred from the Siamese. If you want a Siamese you are going to have to go out and find one.
Nope - genetics do not work that way. Spay and neuter your cats. If you want a REAL Siamese, you get one from a reputable breeder.
If you like the pointed pattern on a shorthair cat, the shelters have plenty of pointed domestic short hair cats that look similar to a Siamese.
