call the place you are going out to dinner and ask them if they have someone who can sing for you, and have them sing her a song, and a rose.

or something a little more modest would be to take her somewhere really special afterward like a favorite romantic spot and play some soft music and dance with her, she will fall in love and hopefully the place will be private and you can lay in the grass or sit on a bench with her and talk, and she will do the rest.
