A sensei usually wears a black belt. A person with a master rank may wear a black belt but might choose to wear a red and white belt. Some use a red and black belt. Depending on the place they can have other options.
Sensei is a teacher, but not necessarily always a master. by that I, mean that a Master is higher in seniority, expereince, knowledge and ability. Sensei is a Japanese temr so that limits the arts an culture to Japanese or Okinawan arts. That being said, a Sensei may wear a Gi, or a Hakama. Outside of class he may wear any normal clothing just like anyone else. Your term robes is often used, but martial arts uniforms are not really robes. The confusion there comes from some of the chines arts practiced in monasteries. since they trend to wear robes there are some cases where robes may be present. Martial arts are not about religion even if a few tend to tie it into their practice. By and large that is not the case. most martial arts training has nothing at all to do with Zen, Buddhism. Taoism, ...etc.

As far as self defense goes. Nobody will mess with you if you wear one of these for sure! Grandmaster or not! lol

Depending on the teacher's ethnicity, perhaps more of a chinese styled outfit with a sash instead of a belt.
The same as all the other students just with a black belt. A white gi and no foot wear.
