Just as you would write a poem about anything else. You sit down and get your ideas, thoughts, and feelings down first. Then clean it up until it is something at least resembling a poem if it isn't already (if it is already then just skip to cleaning it up to make it beautiful and whatnot, which would be the next step if you will).

First, write down some words that come to your mind when you think about day time. How does it make you feel? What makes it special? Then, try to work those words into lines. The lines do not have to rhyme, just write down a bunch of your thoughts about the subject and it will come out as a poem.
